Eating healthy can be hard, but not because of the eating part. It’s not always easy to find new healthy recipes to cook that are actually exciting! So today, Synergy Outdoor Living is here with five healthy recipes you need to try out this spring*. And as a reward, one not-so-healthy treat! It’s all about moderation.

There are limitless ways to switch up a healthy meal, and stuffing vegetables is one of our favorites. Although this recipe focuses on peppers, if that’s not your thing you can feel free to try many other veggie variations, such as:

Not only are stuffed veggies a simple and easy meal to make, but they are also super low carb. Aside from all the different vegetables to stuff, you can mix up what you stuff them with! These can be a staple food and a great way to incorporate more (grilled) vegetables into your diet.

#2. Grilled Salmon in Foil 

 

Fish is one of the healthiest proteins you can cook, and salmon is one the most flavorful of the bunch. Cooking fish is much easier than you may expect. This dish is perfect for spring, with the light lemony flavor of the salmon, complemented with your choice of vegetables. May we suggest asparagus, perfect for the grill and even better wrapped in bacon.

#3. Grilled Portobello Mushrooms 

 

Some people are picky eaters who don’t enjoy eating vegetables, but the truth is, how you cook the vegetables makes all the difference to how they taste.  

Grilling veggies is a simple, easy way to bring out the very best flavors from any vegetable. After trying out these grilled portobello mushrooms, you may start throwing every vegetable you can buy on the grill just to see how it can transform the flavor! 

This recipe brings out the best of the mushrooms with a basic marinade that enhances the umami flavor (means “savory” and is considered our fifth basic taste). Even better, clean-up is a breeze!

#4. Grilled Flank Steak Tacos 

 

These delicious flank steak tacos are so easy to make in a pinch and will be sure to leave everyone satisfied.  

Flank steak is a good option that won’t break the bank when you want to cook steak, but you’ll need to tenderize this cut with a flavorful marinade. This marinade brings out some great flavors for spring, with hints of citrus, garlic, and cumin. Pair these tacos with an ear of corn and chipotle-lime butter from our outdoor dining menu.

After grilling, don’t forget to let the meat rest for 5-10 minutes before cutting into it. It helps lock in the juices and keeps the meat tender.

#5. Grilled Pesto Chicken Skewers 

 

Nothing says spring like a nice Caprese salad, and these grilled pesto chicken skewers are no different. 

Pesto chicken, grilled tomatoes, and seasoned mozzarella go together perfectly with a refreshing flavor perfect for dining outside on a spring evening. This dish may be light and healthy, but doesn’t feel like it at all! It’s sure to be a crowd favorite.
