From cheesy potatoes to stuffed jalapeños, these recipes bring bold flavors to your outdoor kitchen and make every gathering more memorable.

Foil Packet Cheesy Potatoes 

Nothing beats the simplicity of these gooey, cheesy potatoes with a smoky, grilled flavor. 

Ingredients: 

  • 14 small potatoes, thinly sliced 
  • 1/2 tsp salt 
  • Pinch of pepper 
  • 2 slices of bacon, cooked and crumbled 
  • 1 cup shredded cheddar cheese 
  • 2 green onions, sliced 

Instructions: 

  1. Microwave the potato slices for 3-4 minutes until tender. 
  2. Preheat the grill to medium heat. Place the sliced potatoes in a single layer on an aluminum foil sheet sprayed with non-stick cooking spray. 
  3. Season with salt and pepper, then layer 1/3 of the cheese and bacon over the potatoes. Repeat the layers until all ingredients are used. 
  4. Fold the foil packet tightly, using an extra sheet if needed. 
  5. Place the packet on the grill, close the lid, and cook for 10-20 minutes until the cheese is melted and the potatoes are soft. 
  6. Open the packet, sprinkle with green onions, and serve warm! 

 

Grilled Stuffed Jalapeños 

A spicy, savory treat that’s sure to kick things up at your next gathering. 

Ingredients: 

  • 12 fresh jalapeños 
  • 1/2 cup cream cheese, softened 
  • 1/2 cup shredded cheddar cheese 
  • 1/4 cup cooked bacon, chopped 
  • 1/4 tsp garlic powder 
  • 1/4 tsp smoked paprika 
  • Salt and pepper to taste 

Instructions: 

  1. Preheat the grill to medium heat and slice each jalapeño in half lengthwise, removing the seeds. 
  2. In a bowl, mix the cream cheese, cheddar, bacon, garlic powder, and paprika. Add salt and pepper to taste. 
  3. Fill each jalapeño half with the cheese mixture. 
  4. Place the stuffed jalapeños on the grill, cut side up, and cook for 8-10 minutes until the cheese is melted and the peppers are slightly charred. 
  5. Serve warm and watch them disappear! 

 

BBQ Shrimp Skewers 

These smoky, savory shrimp skewers are the perfect mix of flavor and simplicity. 

Ingredients: 

  • 1 lb large shrimp, peeled and deveined 
  • 3 tbsp olive oil 
  • 2 tbsp lemon juice 
  • 1 tsp smoked paprika 
  • 1/2 tsp garlic powder 
  • Salt and pepper to taste 
  • Fresh parsley, chopped (for garnish) 

Instructions: 

  1. In a bowl, mix the olive oil, lemon juice, smoked paprika, garlic powder, salt, and pepper. 
  2. Toss the shrimp in the marinade and let sit for 15-20 minutes. 
  3. Thread shrimp onto skewers, then grill over medium-high heat for 2-3 minutes per side until cooked through. 
  4. Garnish with fresh parsley and serve. 

 

Grilled Brie with Honey and Almonds 

A unique, indulgent appetizer that’s as easy as it is delicious. 

Ingredients: 

  • 1 small wheel of brie 
  • 2 tbsp honey 
  • 1/4 cup sliced almonds 
  • Fresh thyme, for garnish 

Instructions: 

  1. Preheat grill to medium-low. Place the brie on a piece of aluminum foil with raised edges to hold the toppings. 
  2. Drizzle honey over the brie, then top with almonds. 
  3. Place on the grill, cover, and cook for 5-7 minutes, until the cheese is soft and melty. 
  4. Garnish with thyme and serve with crackers or sliced baguette. 

 

Grilled Veggie Platter 

This light and healthy option adds color and freshness to your table. 

Ingredients: 

  • 1 red bell pepper, sliced 
  • 1 yellow bell pepper, sliced 
  • 1 zucchini, sliced 
  • 1 yellow squash, sliced 
  • 1/4 cup olive oil 
  • 1 tsp Italian seasoning 
  • Salt and pepper to taste 

Instructions: 

  1. Preheat the grill to medium-high heat. Toss the veggies with olive oil, Italian seasoning, salt, and pepper. 
  2. Grill veggies for 5-7 minutes per side until tender and charred. 
  3. Arrange on a platter and serve as a vibrant side or main dish.
